Easy Roasted Cornish Hens

If you don’t feel like waiting for Thanksgiving to have a juicy bird on the dinner table, here’s a recipe worth trying. This easy roasted cornish hen formula will give you the juiciest meat you’ll try until November. And it’s a real example of what to serve for an Easter dinner if you’re aiming for a tasty feast.

Ingredients

  • Four cornish hens
  • Eight carrots
  • Eight celery stalks
  • One yellow onion
  • Three cloves garlic
  • Five springs rosemary
  • 3-4 tbsp Butter
  • 2-3 tbsp Parsley
  • 2 tsp smoked paprika
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp powdered garlic

Instructions

So you’ll have no trouble making easter soul food since we’ve separated the instructions into simple steps even beginner chefs can follow. 

So, go at them one by one, and making a traditional Easter dinner will be easier than ever.

Step 1

Start by preheating the oven to 450 degrees F.

Step 2

Get a baking dish large enough to fit the hens. Our advice is to go with a 9×13 inch dish.

Step 3

Chop the vegetables and spread them with the rosemary over the bottom of the dish. 

Step 4

Rub some olive oil over the Cornish hens and leave them to the side until later.

Step 5

Mix all the spices in a bowl, then spread them over the meat. Make sure the inside is well covered. If you prefer spicier food, add some chili to the mix as well.

Step 6

It’s time to place the hens into the dish. Make sure to loosen the hens’ skin with your fingers and place a slice of butter under each one.

Step 7

Tie the legs using a kitchen string, and the chicks will be ready for cooking.

Step 8

Bake for the next hour. Depending on the size of the birds, 50 minutes may be enough. So, don’t forget to watch the progress.

Once the hens are well prepared, take the dish out of the oven and let everything rest for about 15 minutes.

Southern Baked Macaroni And Cheese

Ingredients

  • 3 cups macaroni of your preference
  • 1 cup cheese blend (Colby and Monterey Jack)
  • 1 cup cheddar
  • 1 cup smoked cheddar
  • 6-8 oz Velveeta cheese
  • 1 1/2 cup milk
  • 1/2 cup heavy whipping cream
  • Two eggs
  • Salt 
  • Pepper 
  • Paprika (optional)

Instructions

Step 1

Start by preheating the oven to 350 degrees F.

Step 2

Cook the macaroni until just al dente. Then, drain the pasta and set it aside. If you are a beginner, check the box for instructions.

Step 3

Combine the milk, heavy cream, and cheeses (except smoked cheddar) in a bowl. Then stir to combine. 

Taste the mixture and spice if necessary.

Step 4

Once you’re happy with the flavor, add the eggs. Now it’s time to stir once again until the mixture combines.

Step 5

Butter a baking dish large enough to fit the pasta. Then, add the macaroni inside and pour the cheese mix on top.

Distribute the mixture evenly, then top with smoked cheddar.

Step 6

Bake in the oven for 35-45 minutes. Don’t worry if the result isn’t firm when you take it out.

Step 7

Let the meal cool off and stiffen for the next 10 minutes.

Cream Cheese Mashed Potatoes

You can’t throw a traditional Easter dinner without a potato dish, right? That’s why we’ve prepared this mashed miracle. Once you try this recipe, you’ll forget about all the basic ones you’ve had over the years.

We’ll show you that even simple dishes can turn out extraordinary. So go ahead and learn how to make the creamiest potatoes you’ve ever seen.

Ingredients

  • Four large potatoes
  • 4 oz cream cheese
  • 4 tbsp butter
  • 2 1/2 cup chicken broth
  • 1/2 cup half n half

Instructions

Step 1

Start by peeling the potatoes and slicing them into even pieces.

Step 2

Place the potatoes in a large pot and pour the chicken broth over them.

Step 3

Boil the ingredients, lower the heat and let everything simmer for the next 20-30 minutes. Once the potatoes are super tender, you’ll be ready for the next step.

Step 4

Next, you should drain the potatoes and set them back into to pot. Set the heat to medium and steam the potatoes for a short time. 

Step 5

Mash the potatoes softly only one or two times. Then, add the cream cheese and the butter and let them melt in the heat.

Step 6

Toss the potatoes with a rubber spatula and jumble them with the butter and the cheese.

Step 7

Pour half n half into the mix.

Step 8

Stir! Keep stirring until the potatoes have combined with everything else. Do this until you reach a texture you prefer. If the mixture needs more half n half, feel free to add some.

Step 9

Add a bit more butter to the potatoes. Don’t mix it this time, but let the butter melt on top.

And, voila! It’s time to serve your traditional Easter dinner in a southern style.
